Bak deze. Gel van zwarte olijf: De ontpitte olijven even koken in de consomm\u00e9 of bouillon, cutteren en inkt van sepia en agar agar toevoegen. Laten opstijven en afgekoeld cutteren en in een spuitzak steken.<\/p>\n<p><strong>Chutney van mango:<\/strong> alle ingredi\u00ebnten samenvoegen en op een zacht vuur\u00a0gedurende een uurtje laten trekken, daarna doormixen en laten afkoelen.<\/p>\n<p>De rauwe ganzenlever fijn snijden, kruiden met zeezout en oprollen.
