Cuisez-les.<\/p>\n<p><strong>Gel d\u2019olives noires:<\/strong> faites bouillir bri\u00e8vement les olives d\u00e9noyaut\u00e9es dans le consomm\u00e9 ou le bouillon, passez au cutter culinaire et ajoutez l\u2019encre de seiche et l\u2019agar-agar. Laissez \u00e9paissir et passez au cutter une fois refroidi et versez dans une poche \u00e0 douille.<\/p>\n<p>Chutney de mangue : M\u00e9langez tous les ingr\u00e9dients et laissez tirer \u00e0 feu doux durant une petite heure, ensuite mixez et laissez refroidir. Coupez le foie d\u2019oie cru en fines tranches, assaisonnez au sel marin et roulez.
