Chips de betteraves rouges : tranchez finement, blanchissez et passez les au four sur papier sulfuris\u00e9 jusqu\u2019\u00e0 ce qu\u2019ils soient bien croustillants. Coulis de betterave rouge : mixez la betterave cuite avec un filet d\u2019eau, jaune d\u2019\u0153uf, montez le tout en coulis avec l\u2019huile.<\/p>\n<p>La vinaigrette : laissez fondre le miel, le vinaigre balsamique, l\u2019huile de noix et mixez le tout. Tranchez le carpaccio de cerf de Nouvelle-Z\u00e9lande, badigonnez les tranches sur un seul c\u00f4t\u00e9, assaisonnez en sel et poivre noir.
