Cette salade doit \u00eatre consid\u00e9r\u00e9e comme une id\u00e9e de base car on peut r\u00e9aliser toute une s\u00e9rie de variantes avec d&#8217;autres ingr\u00e9dients : melon, mangue, framboise, betterave et fromage bleu cr\u00e9meux.<\/p>\n<p><strong>Temps de pr\u00e9paration 9 heures (dont 5 h de marinade + trois heures de fumage).<br \/>\nTemps de cuisson 5-10 minutes<\/strong><\/p>\n<p><strong>Ingr\u00e9dients<\/strong><\/p>\n<p><strong>Pour la Cervena<\/strong><br \/>\n4 sachets de th\u00e9 fruits rouges ou cassis<br \/>\n1 tasse de gros sel de mer<br \/>\n2\/3 tasse de sucre brun<br \/>\nUne pinc\u00e9e de nitrate de potassium (pour \u00e9viter la d\u00e9coloration)<br \/>\n1 longe ou un gigot de Cervena<br \/>\n4 cuill\u00e8res \u00e0 soupe de poivre noir concass\u00e9<\/p>\n<p><strong>Pour la vinaigrette<\/strong><strong> \u00e0 la framboise<br \/>\n<\/strong>100ml d&#8217;huile de noix<br \/>\n1 cuill\u00e8re \u00e0 soupe de vinaigre de framboise<br \/>\n1 \u00e9chalote, finement coup\u00e9e en d\u00e9s<br \/>\n1 cuill\u00e8re \u00e0 caf\u00e9 de moutarde de Dijon<br \/>\n1 cuill\u00e8re \u00e0 soupe de ciboulette fra\u00eeche hach\u00e9e fin<\/p>\n<p><strong>Pour la salade<\/strong><br \/>\n2 nectarines ou p\u00eaches, d\u00e9noyaut\u00e9es et coup\u00e9es en deux, caram\u00e9lis\u00e9es au beurre<br \/>\n1 orange filet\u00e9e<br \/>\n200g de myrtilles fra\u00eeches<br \/>\n4 radis, coup\u00e9s en segments<br \/>\n1 bouquet de petites feuilles de roquette<br \/>\nQuelques brins de cresson<br \/>\n1\/4 de tasse de noix fra\u00eeches, l\u00e9g\u00e8rement grill\u00e9es<br \/>\n30g de ch\u00e8vre frais<\/p>\n<p><strong>Pour la garniture<\/strong><br \/>\n1 panais, coup\u00e9s en fines tranches \u00e0 l&#8217;\u00e9conome et frit lentement \u00e0 l&#8217;huile, jusqu&#8217;\u00e0 ce qu&#8217;il soit dor\u00e9 et croustillant.<\/p>\n<p><strong>Pr\u00e9paration:<\/strong><\/p>\n<p>Commencer par pr\u00e9parer la Cervena. M\u00e9langer le th\u00e9, le sel, le sucre et le nitrate de potassium, enrober ensuite la viande de ce m\u00e9lange.<\/p>\n<p>Laisser reposer pendant cinq heures, en retournant r\u00e9guli\u00e8rement.<\/p>\n<p>Retirer la viande du m\u00e9lange, rincer, \u00e9goutter et s\u00e9cher.<\/p>\n<p>Fumer la Cervena \u00e0 froid sur des copeaux de barriques de pinot (ou sur d&#8217;autres copeaux de bois \u00e0 fumer) pendant trois heures.<\/p>\n<p>Laisser refroidir, puis recouvrir de poivre noir concass\u00e9 et laisser s\u00e9cher sur une plaque chaude jusqu&#8217;\u00e0 brunissement.<\/p>\n<p>Laisser refroidir \u00e0 nouveau, puis envelopper et congeler la viande pendant 30 minutes environ &#8211; ce qui facilite son tranchage. Retirer du cong\u00e9lateur et couper tr\u00e8s fin.<\/p>\n<p>Pr\u00e9parer la vinaigrette en mettant tous les ingr\u00e9dients dans un petit bol en fouettant pour m\u00e9langer. R\u00e9server.<\/p>\n<p>Mettre les ingr\u00e9dients de la salade dans un bol et m\u00e9langer d\u00e9licatement.<\/p>\n<p>Pour servir, r\u00e9partir les tranches de viande sur les assiettes. Ajouter un peu de salade \u00e0 chaque assiette, d\u00e9corer avec les panais frits.
